The requirements are phrased negatively in the patch notes, which makes it a little hard to understand. You don't lose the status if you surpass either of them, you keep the status as long as you still have either of them. If you've passed 168 hours, but you haven't completed 2.55, you'll still have the status, and vice versa.

You're a sprout while you meet either of these requirements (meaning you need to surpass both in order to stop being a sprout): Have not reached 168 hours of playtime logged on the character.
